Simeta is made from the rare, local, and indigenous variety Arcos which once was widely planted in Valencia before phylloxera. Perfectly suited to the Mediterranean, this variety ripens late (always after Monastrell) but retains a fresh acidity and boasts a moderate alcohol level. Javi’s Arcos comes from 1 hectare of 50-year-old vines planted in the Simeta vineyard. Harvested by hand it is fermented 70% whole cluster by indigenous yeast in concrete vats, followed by aging for 10 months in amphorae and a few glass demi-johns.

The 2022 Simeta is a single-vineyard varietal Arcos from a plot on the south side of the Penya Foradà mountain that was planted in 1970 on rocky limestone and iron soils the only wine from red soils. It fermented with 100% full clusters and indigenous yeasts in concrete vats including malolactic and matured in a 1500-liter oak foudre and a 500-liter French oak barrel for one year followed by six more months in concrete until it was bottled. It has 14% alcohol a pH of 3.57 and 5.2 grams of acidity. It has some tannins in a somewhat Italian style and is a little earthy with some hints of iron. It's a classical Mediterranean year in the style of 2020 but it's the first year that the wine aged in foudre; this shows in the precision and the lifted character that makes it finer-boned. The red soils give it a different texture from the white soils. This is austere and for the long term. But there's never a sensation of heat or weight. 3200 bottles were filled in March 2024. Javi Revert planted another three hectares of Arcos close to Simeta in 2023 so he now has 12.42 hectares all in his village of La Font de la Figuera and a potential for 39000 kilograms of grapes and a theoretical 30000 bottles from the 2028 harvest. He produced 20000 bottles in 2024 coming up from the 15000 in 2023. After a very warm and dry 2022 2023 was saved by the rain at the end of August for him the new style of "cooler" Mediterranean vintages freshened up by the rain and he achieved wines with finesse and freshness. The 2023s have the advantage of a new barrel room at a constant 15 degrees Celsius and stable 80% humidity and the élevage is a lot more precise. Published: Jan 09 2025
