Cellar/Tasting Notes
Bernard Defaix, fourth generation of a family of vine-growers, started in 1959 with 2 hectares of land in Chablis.
Over the years, Bernard and his wife Monique acquired new land. Their efforts enriched the domain, which now includes some of the best parcels in the Chablis region.
Today, true to family tradition, the domain is run by their sons, Sylvain and Didier. Bernard nevertheless continues to provide his expert advice to his two sons.
Didier looks after the vineyards, sales and marketing. Sylvain is in charge of all the wine making, ageing, and bottling.
Burghound (BH): 90-93 "A reserved and elegant nose shyly suggests aromas of mineral reduction, citrus and tidal pool nuances that introduce beautifully detailed and seductively rich flavors that also enjoy plenty of dry extract that adds a sense of volume to the bone dry and highly persistent finish. This is really a lovely effort." |
