This white wine grape from Bordeaux is the basis of excellent dry and sweet wines, nearly always blended with Sauvignon Blanc. Dry versions of Semillon are made in Bordeaux (especially Graves), California, Chile and Australia. When made dry or sweet, as in Sauternes and Barsac, the wines have a mix of apple, pear and fig, with a note of citrus. Semillon takes especially well to the botrytis mold, essential to making exquisite dessert wines.
